All my kids are out of school, we've swam, eaten popsicles, and even heard "I'm bored!" a time or two — yep, it's safe to say that summer is in full swing! 😂
I don't know about you, but I grew up eating Zucchini Bread slathered with butter all summer long, and recently asked my Mom to send the recipe she used all those years ago to see if I could make it gluten free and just as good.
Long story short: MISSION ACCOMPLISHED!
My Gluten Free Zucchini Bread is soft and moist, full of cozy cinnamon and vanilla flavors, and one of the most comforting, incredible quick breads I've ever had the pleasure of eating. This will absolutely become a new (old?) summer tradition moving forward. I can't wait to see what you and your family think of the recipe!
