Simple, Delicious Lebanese Vegetable Recipes.

Fresh produce is everything! The Mediterranean way is among the healthiest, and it's simple to eat this way every day.

~ Fresh Produce ~
Fresh produce is a part of every path to good health and deliciousness. The Mediterranean way with vegetables and fruit is an incredibly light touch, which means selecting the best produce you can find is key for flavor and enjoyment. There is no vegetable or fruit that the Mediterranean Diet wouldn't include! So here we'll focus on my favorites: Green leafy, Salads, More Salads, Pickles, Root Veg, and Cruciferous Veg (broccoli!). And of course a wide array of whole fruits, every day. Make your green leafy intake more fun with my Kale Chip recipe, dusted with za'atar (sea salt would be great too). We get after a spinach saute regularly. Same broccolini all sauced up, and cauliflower, which is excellent given the shawarma treatment or fried with a dipping sauce. Carrots are a gorgeous bunch roasted and topped with a dollop of labneh. We will never, ever eat enough fattoush salad, so if you haven't gone there yet . . . well, let's go (consider a kit with the right ingredients)! Cucumber salads are a favorite, classic Lebanese salad, or with feta or in yogurt with lotta herbs. Mom's Big Romaine salad is one of your favorites from my cookbook; the lemon vinaigrette is here. Stay tuned for another salad newbie later this week! Pickles are a mainstay for snacking, pre-dinner, with dinner, lunch, even breakfast. Try the classic pink turnips, and don't miss my mixed vegetable pickles. Flavor and crunch heaven. The pickles chapter in my cookbook is a nice resource, with those Carrot Coriander pickles making headlines here.
