Try as I might, I've never been able to stick to a weekly meal plan.
It doesn't matter if I plan, shop, and prep ahead of time. By Wednesday night, I know I'll be improvising.
- Maybe I'll make something that wasn't in the plan, because that's what sounds good that night.
- Or maybe I'll have leftovers from Monday or Tuesday.
- Maybe I'll just want takeout!
Over the years, I've realized that that's ok! You don't have to plan all your meals ahead of time to eat well throughout the week.
3 Plant-Based Dinners to Try This Week
Now, instead of planning a full week of meals, I choose 2-3 recipes on the weekend and stock up on the ingredients.
That way, I still have a plan, but it has enough flexibility to allow for
- unexpected leftovers,
- cravings,
- or a fun takeout meal or dinner out.
