Make a soup with ANY vegetable!

Here's today's Tip/Kitchen Hack:

Today I'm going to share how you can make a soup out of basically any ingredients you have on hand. This tip will come in handy especially when you're trying to eat more vegetables!

Soup to me is like a hug in a bowl! And you don't really need a recipe to make soup. A handful of vegetables, something to give the soup body like potatoes or cream, and seasoning. 15-20 minutes and you can have delicious, hot soup ready.

  • Vegetable: You can use nearly any kind of vegetable to make a soup. Sweet potato, zucchini, squash, turnip, tomato, mushrooms, onions, cabbage, kale, potatoes, cauliflower, broccoli, sweet corn — the list goes on. But keep in mind, this makes the base of the soup - which means you have to like the flavour of the vegetable!
  • Stock: While this is not necessary for every soup, it sure adds a lot of flavour. 
  • Aromatics: Here is where you have total freedom! Go with the classics like onion, garlic and celery and pair it with some seasonings and fresh herbs like rosemary, thyme, cumin powder, chilli flakes, oregano and so on!
  • Thickener: If you're making a soup that needs a slight amount of thickening, you can rely on corn flour or potato starch slurry, cream or even add boiled potato for blended soups.
  • Accompaniment: You can top off the soup with a range of choices! Parmesan cheese, tortilla chips, refried beans, pesto, sour cream, chopped raw vegetables even!

The only thing you have to pay attention to is how to cook the vegetables. This depends on the type of vegetable and texture of the soup:

  • If you're looking to make a blended soup, all you have to do is cook chunks of vegetables - either in the pressure cooker or in boiling water over the stove. Once cooked, you can drain the water, let the vegetables cool down and blend it. Now transfer the puree to a stockpot and continue with the seasoning!
  • If you're making something like aSweet Corn Soup, using diced vegetables, cook it in a stock pot until soft and tender, either with stock or water. Once cooked, continue with the seasoning and thickening steps.
  • Once you add herbs or seasoning, simmer the soup until all the flavours come together. This usually takes only about 5-7 minutes. Finally add the thickener once you like the flavours

Remember the steps -

Saute → Cook (blend if necessary) → Season → Simmer → Thicken → Serve!
