How to make my quick and easy, better than Campbell's soup recipe

Hi reader,

Living in cabins and AirBnB's for 12+ weeks has taught me a lot about cooking - especially on making our favorite recipes without the tools I usually have (like a stand mixer or food processor) and cooking from scratch without tons of chopping and prep work.

One of the newest recipes to make it to our meal plan rotation is "Cheater" Chicken Noodle Soup, and it's absolutely delicious! My kids loved this recipe so much that they ate it for THREE days in a row, and they requested it for dinner again the next week!

I like to put this soup on the meal plan when I know there will be leftover chicken, but you won't know if there will be leftover chicken unless you make a meal plan first!!

"Cheater" Chicken Noodle Soup

  • 1 (12oz) bag frozen onions, celery, peppers blend 
  • 1 (16oz) bag frozen peas, corn, green beans vegetable blend
  • 32 oz chicken stock
  • 1 cup cooked shredded chicken
  • 1 cup raw elbow noodles
  • 1 tsp Italian Seasoning
  • Salt & Pepper to taste
  • Water, for soup and to cook the noodles

Fill a medium stock pot halfway with water and bring to a boil. Cook the noodles until al dente. Drain and set aside.

Meanwhile, in a large stock pot, combine the bags of frozen vegetables, chicken stock, shredded chicken, and Italian Seasoning. If needed, add additional water to ensure the vegetables are covered with about ½" - 1" of water. Bring the mixture to a simmer and let it cook until the noodles are done.

When the noodles are done, dinner is ready! Serve about ½ cup noodles with 1-2 ladles of soup per person.

Recipe Notes


  • This recipe needs just 1 cup of shredded chicken. This can come from slow cooker chicken, Instant Pot chicken, leftover grilled chicken… whatever you have. And if you have leftover turkey, that works too!
  • This is a great recipe to double or triple, and it's freezer friendly too! Here's how to freeze pasta, and you can simply combine the other ingredients in a separate freezer safe bag.
  • If you have the ingredients on hand, cheese-y biscuits are really good with this soup. Here's my biscuit recipe - just mix ½ cup shredded cheese into the dough and make drop biscuits (instead of rolling out the dough).
