Here's your Meal Plan + Holiday Desserts! 🍪




Hello again!

I hope this email finds you well, and that you're staying warm and cozy wherever you live. If you've been watching the behind-the-scenes on my Instagram stories this week, you may already know that I've been trying to work-ahead a little bit before my kids are home for winter break! (They wouldn't be able to stay quiet while I film cooking videos, for sure.)

Below, you'll find some meal ideas to help make your life easier this week, and I've also included a few holiday dessert ideas if you want to make something sweet, like these oat flour brownies. (Try the peppermint variation, too!)

If you haven't visited my website this week, here's what you might have missed.

Cauliflower Soup. This creamy cauliflower soup reminds me of a lightened-up potato soup. It's dairy-free & vegan, and cooks in just about 30 minutes! It's the perfect way to sneak some comforting veggies into your week during the holiday season, and you can add any extra toppings you love.




Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Pesto PastaPesto Pasta is an easy weeknight meal that comes together in less than 30 minutes. You can whip up the pesto as your pasta cooks, for maximum efficiency, and it's so delicious, you'll want to lick the bowl clean!

Monday: Salmon Curry. This Salmon Curry is a fast and flavorful meal that comes together in just 1 pan, in less than 30 minutes. You can use any veggies you have on hand with this easy curry sauce.

Tuesday: Beet Salad with Apple Cider Dressing. This Beet Salad is a crowd pleaser! The combination of steamed beets, crunchy red onion, creamy goat cheese, and a sweet and tangy apple cider dressing is addictive.  

Wednesday: Easy Ratatouille.  Ratatouille is an easy cooked vegetable dish that you can serve as a side dish or main course. If you'd like to serve Ratatouille as a main course, I recommend serving it over a cooked grain, such as rice, quinoa, or pasta.

Thursday: Instant Pot Lentil Soup. This hearty Lentil Soup makes an easy vegan lunch or dinner. It's packed to the brim with veggies, and cooks in only 10 minutes when you use an electric pressure cooker, like the Instant Pot.

Friday: Singapore Noodles. Singapore Noodles are a take-out favorite, featuring comforting noodles tossed with curry powder and veggies. This version is my easy homemade spin, using ingredients that you probably already have on hand in your pantry. You can whip it up in just 30 minutes or less! 

Saturday: Day off from cooking! (Leftovers or take-out)



Holiday Dessert Ideas


Gingerbread Cookies. These are by-far the most popular holiday cookie this year. Everyone loves them! Made with almond flour and NO eggs, for a paleo & vegan dessert.

Almond Flour Sugar Cookies. These cookies are also made with almond flour, and you can roll them out and use cookie cutters for a classic holiday look.

Chocolate Turtles. Chocolate Turtles are a bite-sized treat made with crunchy pecans, caramel, and dark chocolate. Now, you can make a healthier version at home, using only 4 simple ingredients!

Peppermint Hot Chocolate. Peppermint Hot Chocolate is the perfect recipe for a chilly day. All you need is 5 ingredients to make it, and it's ready in just minutes!

Vegan Chocolate Crinkle Cookies. These Vegan Chocolate Crinkle Cookies are quick and easy to prepare, using ingredients that you probably already have on hand in your pantry. I love how you don't need flour or eggs to make them, so they are naturally gluten-free and Paleo-friendly.

Vegan No Bake Spice Cookies. These No Bake Spice Cookies are a nice alternative to the chocolate variety. It can be customized to use any nut butter you have on hand, but I prefer cashew butter for its lightly sweet and neutral flavor.

Easy Coconut Macaroons. These easy Coconut Macaroons are naturally sweetened with maple syrup, with no eggs or flour required. I love how they are crispy on the outside, and chewy on the inside!
