Hello reader Autumn is well and truly here in the UK. The leaves are starting to drop from the trees and it's chilly, windy and wet. But the cooler weather has its compensations. I love autumn for its colour and clarity (when the sun shines) and because it's no longer hot. What are your thoughts on it? To match the weather, this week's post is for one of my favourite comfort foods - soup. Warm, filling, easy to make and delicious. What more could you ask? This courgette and corn soup makes the most of any overgrown courgettes you may still have lying about and seasonal sweetcorn. We haven't grown any sweetcorn, but I'm seeing a lot of it about in gardens and allotments where we live. And it's being harvested right now. The soup is nutritious, dairy-free and fat free. That is, if you don't add the spoonful of pesto to each bowl as I've suggested. The pesto is vegan, but it isn't fat free. I made the pesto with our first harvest of basil. It's ridiculous it should be so late in the season, but that's gardening for you. Whether or not you grow your own courgettes, sweetcorn or basil, this is a great late summer / early autumn soup to make. Give it a go and let me know what you think.
