It's another year and another September and once again we find ourselves with school and homework and housework and cooking and appointments and practices…
We have just 24 hours to get ALL.THE.THINGS done, which seems even harder when KID.THINGS and HUSBAND.THINGS somehow become YOUR.THINGS too.
Except this year, our schedules are anything BUT routine.
In the past two months, we've been in 20 states, slept in 17 different beds, walked 200+ miles and drove over 9,000 miles.
In that same time frame, we cooked 189 meals!!
For the average person, that means spending anywhere from 56 to 84 hours in the kitchen… just cooking dinner.
Couple that with homeschooling, running a business, laundry, planning hikes, driving to the parks and actually hiking, that means very, VERY full days.
The temptation to eat out was HUGE - especially after 11 hours on the road - but I knew that I was not only capable of cooking dinner myself, but that I could do it quickly. This saved us TONS of money, but also tons of time too! (Most restaurants were at least 30 minutes away).
All said and done, I spent just 42 hours in the kitchen these past 8 weeks, and those hours included breakfast, lunch, dinner, dessert AND all the snacks we took hiking. (high five)
And 90% of our meals were made from scratch!

I am a spreadsheet, organizer junky.
