FYI: If you aren't a blue cheese fan, don't let anyone bully you into using it. This salad is super delish with ranch dressing and shaved Parmesan in place of the blue cheese!
It's incredibly warm where I live, which pretty much zaps my will to cook, move, and live. 😜 But I can't complain (oh wait, I still do), because I have friends in Arizona and Texas, and the heat here doesn't even compare.

I've been making these pinwheels for pretty much every event and function this summer. I've forgotten how popular they are. People go CRAZY for them. The beauty is that they can be made and frozen ahead of time (they defrost great!).
