Over the last few weeks I’ve been thinking of how I can make our spring easier and more effortless when it comes to meals, while keeping the variety that we enjoy. If you have my most recent cookbook, Easy Everyday, then you know what a hidden gem the sauces and dressings chapter is! It’s full of my pantry and fridge staples, which are basically sauces, dressings and more that I like to have on hand to elevate everyday meals. This doesn’t mean I make all of the sauces and dressings every single week - but I do find that picking one or two helps to add variety to lunches and dinners (sometimes breakfast too!) and helps to keep meals exciting. Or it changes them just enough that we don’t get bored. Which is key! A capsule kitchen is so much different than a capsule wardrobe, obviously. Sure, we could choose some bigger pieces (rotisserie chicken, a pot of rice, the same roasted vegetables) each week, but when it comes to food, that doesn’t equal enough variety for me. Instead of classic, timeless wardrobe pieces that stand the test of time, I prefer to go with fun, seasonal “accessories” that change up our meals greatly. Meaning, I’m all about the little things! Making a few small low effort sauces and/or dressings - things that take 5 or 10 minutes - to make our meals special and different.
