Well guys, we've had an interesting week in our house. We've been looking forward to a spring break trip to Arizona for months, but we had to cancel it due to a big Minnesota snowstorm and our kids getting sick. (Sick kids and adults all staying in one hotel room sounded, honestly, a little terrifying.)
So instead of being in sunny, hot Arizona swimming and lounging around with pool snacks... we have spent the last week right here. Doing the same old thing and making dinner every night.
So instead of sending a fun trip recap, this week I'd like to rate the dinners I made for my family while we were stuck at home!
We're so obsessed with these chicken thighs, I made them 3x in the last week. Pictured above with rice, a tomato cucumber salad, pita chips, and a smoked paprika aioli!
