A simple vanilla quick bread batter is transformed into something exceptional with that sweet cinnamon ribbon (and don't even get me started on the cinnamon crunch topping!).
I have made this bread multiple times over the last few weeks for different gatherings, and it is a slam dunk hit every time.
One bite and I think you'll understand the appeal. The crumb is perfectly moist, lightly sweet, and absolutely delicious with the contrasting sweet cinnamon swirl and crunch. I hope you love it!
P.S. I hope you had a wonderful weekend! We are solidly in spring-weather territory, and I have to keep reminding myself that Idaho likes to play games with my expectations around weather. Basically, I won't be surprised if we get a blizzard next week. 😜
I'll be largely offline the rest of this week. My parents and all my siblings (and a few spouses) are coming into town to celebrate my parent's 50th wedding anniversary. I feel really grateful to have this time with my parents and siblings.
I've been prepping tons of food so our meals can come together easily (we are eating out once or twice, but mostly, we'll be cooking and eating at the Airbnb we are staying at).
Cinnamon Rolls (froze the unbaked - will thaw overnight and bake and frost in the morning)
I made the dry mix for these pancakes (planning to mix these pancakes up and use huckleberries from the freezer for huckleberry pancakes - a family favorite)
Instant Pot Salsa Verde Chicken (will serve this as a build-your-own style meal with cilantro lime rice, black beans and tons of toppings for bowls, salads or burritos)
We have a fun few days planned renting e-bikes to ride around the Boise greenbelt (hope the weather cooperates!), playing friendly (I hope my brother reads this 😜) games of pickleball at The Flying Pickle, bowling, attempting an escape room...and mostly lots of chatting and playing Rook and other family-favorite card games together. 💗
