For these gochujang chicken thighs, it's pungent gochujang (a savory and mildly spicy Korean pepper paste) that's mixed with honey, rice vinegar, and a little sesame oil for a marinade that totally transforms your weeknight chicken dinner. Instead of mild-mannered, lean chicken breasts, I recommend sticking with bone-in thighs. They're a bit fattier, so they're more flavorful and less likely to dry out.
