| Hi reader, Beef Enchiladas are the result of my ongoing quest to find new ways to use my homemade red enchilada sauce (it really is that good!) This is the kind of dinner that smells incredible while it's baking, tastes even better, and has the family asking, "When can we have these again?" Best of all, you can partially or fully assemble everything ahead of time so all you need to do is pop the enchiladas into the oven at dinnertime. I love this meal for us!
