Extra toppings for this meal can be used for the Fish Tacos. These bowls can also be made into traditional burritos - roll up the filling and rice (optional) in tortillas with a bit of cheese, if desired. Super yummy and great for an on-the-go meal.
This quick and easy mac and cheese is a great meatless meal and also makes a fantastic side dish for any number of meals. Our favorite way to eat this is to make a "mac and cheese bar" out of it with optional toppings for everyone to add according to their own taste: BBQ sauce (Brian's fave topping!), diced ham, lightly warmed peas, finely chopped jalapenos, cooked bacon - the options are endles!
If making the Skillet Sweet Potato Burrito Bowls above, plan ahead to buy/use up similar toppings for these tacos. If fish isn't your thing, sub in a more traditional weeknight taco recipe like this one.
Coordinate to make extra rice for either this meal or the Skillet Sweet Potato Burrito Bowls (if making both for your weekly meal plan) and have leftover to use in the second meal.
I know the Labor Day holiday is Monday and many of you will be celebrating, however, I intentionally didn't add "holiday/grilling fare" to this menu plan to keep it streamlined and simple.
