I started making these energy balls when my kids started getting heavily involved in school activities. My oldest daughter was in theater, volleyball, and volunteering after school. My youngest was in dance, cheerleading, and track. We were always on the go—running from one thing to the next, practically living in the car.
They needed something they could grab and eat between school and practices - something with protein, healthy fats, and staying power. But more than anything, I needed a snack that was portable. Something I could toss in their backpack or lunchbox, or hand to them as we headed out the door.
Even now, I pack them for my husband—he works long hours on the road, and these are the perfect grab-and-go snack to keep him fueled. I keep a stash in the freezer for busy weeks. And yep, I still sneak a couple in my own lunch bag, too. 😉
