Earlier this month, we spent a week in Hawaii.
In short, that place is magical, and I'd move there in a second if I could.
The biggest highlight of the trip: We saw lava shooting 600 feet in the air at Volcanoes National Park! Truly awe-inspiring. π
Food highlights included lots of shave ice and fish tacos and trying Spam musubi (aka Spam sushi, which I strangely enjoyed...).
I'm not doing a blog post about the trip, but if you'd like a quick rundown of activities and restaurants we enjoyed, hit REPLY and let me know.
Now that we're back to Ohio and to reality, here are a few things I made for dinner last week:
Sourdough Focaccia Pizza
I accidentally over-baked this, but it was still delicious (I do recommend pre-baking the crust about 5 minutes before adding sauce and toppings). This comes from Amy Bakes Bread, and I use her sourdough recipes a lot. If you don't bake sourdough, King Arthur Flour's Crispy Pan Pizza is a great swap.
Main Dish Salads w/ Chicken
I've been slotting in this ultra-easy dinner about once a week. This is mixed greens with goat cheese crumbles, dried cranberries, walnuts, and my Creamy Balsamic dressing. I use this method for cooking the chicken.
Teriyaki Rice Bowl
Tried this new-to-us recipe from What Molly Made. We doubled the sauce. Really liked this one!
Lemon Spaghetti w/ Parmesan Crunchies
Another new one for us that was a hit. I used this recipe from Caroline Chambers (minus the kale because I didn't have it) and added some crispy chicken cutlets rom ALDI.
I ALSO MADE...
Foolproof Sourdough Bread
Took this loaf to a friend's house for dinner. I've made this recipe from This Baking Life so many times!
