Delicious ways to feel better, to your inbox weekly | | Hi , Back in 2017, we served over a tonne of avocado toast in just 24 hours at Wilderness Festival. We were the only stand serving it - wellness (and by proxy, avocado toast) was just starting to catch on. The following year, half the festival had it on the menu. It was simple, full of flavour, and at the time, a little bit revolutionary. Since then, toast has had quite the glow-up. There was the avo-toast boom, the great sourdough craze of lockdown, and now over 4 million posts tagged #avocadotoast and #avotoast across Instagram and TikTok combined. It's officially a global obsession - and still one of our favourite things to make. And it makes sense. We know everyone's juggling a high mental load - we're tired by the end of the day, often lacking the energy or motivation to cook a full meal. That's where toast comes in: it's quick, comforting, and endlessly adaptable. But most importantly, we can make that slice of toast work harder - turning it into something genuinely nourishing, with more fibre, protein and plant diversity in every bite. Whether you're working from home, rushing between errands or pulling together a five-minute dinner, a good piece of toast really can do it all. This week, we're sharing five of our favourite ways to top it - easy, packed with nutritious plants, and completely delicious.

- Start with good-quality bread
We love a thick slice of sourdough, toasted until golden with just the right amount of crunch.
- Make your toppings work harder
A great topping should bring more than just flavour. Look for fibre, protein and healthy fats - think beans, peas, avocado, mushrooms, tahini or pesto.
- Don't forget the garnish
