Hello Friends! I've been baking cakes lately, specifically with almond flour. There are two types: blanched almond flour (light color) and almond meal (darker color). Both can be used in this recipe, however almond meal is less expensive. 😉 You'll get a perfectly moist, not-too-sweet, Italian-style ricotta cake with a hint of lemon.
