🍽 How to Plan Simple Dinners

I think we often have this preconceived notion that making dinner is inherently complicated. That if we're not making something worthy of being on the cover of Martha Stewart Magazine, we're not good enough.

This couldn't be further from the truth!

We all lead busy lives, so the easiest way to get a healthy dinner on the table quickly is to plan meals that are SIMPLE.

Here's a perfect example: Sheet Pan Chicken, Sweet Potatoes, and Broccoli.

This meal requires one big sheet pan (two, if you're intentionally making leftovers), one big bowl, and an oven.

 

  1. Slice or cut the sweet potatoes into 1" pieces. Put them in a big bowl, season as desired (salt + pepper + smoked paprika + cinnamon is my go-to), add 1 tsp of olive oil, toss thoroughly, and put them on the sheet pan.
  2. Put the chicken pieces in the same bowl, season as desired (salt + pepper + coriander + thyme is really good), add 1 tsp of olive oil, toss thoroughly, and nestle them among the sweet potatoes. 
  3. Put the sheet pan in the oven at 400F for 30 min. DO SOMETHING ELSE! Spend this time getting ahead for upcoming busy days.


When the timer goes off, nestle broccoli florets among the potatoes and chicken and put it back in the oven for another 15 min. When the timer goes off, enjoy!

This is the epitome of a simple dinner ready in less than an hour, and it's incredibly healthy. If you find yourself pressed for time night after night, THESE are the types of meals that need to be on your meal plan more often.
