As the weather starts to warm up and the school year wanes down (how can that be?? we end in May here), it seems like our schedules are busier than ever.
Spring sports. So (so, so, so) much yard and animal work around our property and farm. And lots of other commitments thrown in there.
Weirdly, even on crazy, busy weeknights everyone still feels like they need to eat dinner. π
Enter one-pan dinners! The 12 recipes below have saved me on so many nights when dinner needs to be quick, simple, and delicious!
Hopefully they will help rescue dinner night(s) for you, too! π

This one is a huge family favorite; we LOVE eating it with tortilla chips (like a hot, cheesy dip...YUM!).
The comment be low sums up why I love this recipe! ‡οΈ
I really needed this recipe tonight. I did not feel like cooking in any way, shape, or form. And yet, there were hungry mouths to feed. I made this and it was a complete hit. First, it was easy and fast for me to put together. Second, everybody loved it! Can't get any better than that. Thanks, Mel, for once again saving the day!-Brenda
This is a personal favorite of mine - the flavors are so fresh and delicious! Don't skip the Parmesan.
This was delicious! We served it with a brown rice/quinoa mix. Even my picky eaters who claimed to not like squash were very happy with it. No leftovers! Thanks again Mel!!-Kamber
MKC for the win again!!!!!! Just made this dish tonight and it was delicious! My whole family of 6 loves it. For sure going to be in the normal rotation of recipes. Love that's its one dish and 30 minutes!-Katherine
Jacob:Just made these, and now I have a war inside of myself. My favorite cookies, for a very long time, have been snickerdoodles, and I thought that there was no cookie that competed with them⦠But then I made these, and I think that I may have to live with two favorites. thanks for this recipe.
Margaret:My family doesn't like heavy, soggy breakfast casseroles. This one is a perennial favorite! I swap chopped green chiles for the bacon for my vegetarians and even the meat eaters love this variation.
