I learn so much from the next generation in our family.... One thing they do a lot of is meal-prepping. On Sundays, they're going at it with planning, shopping, slicing, dicing. It's a thing that another version of me would love to get into. I'm a cook who shops for basic good ingredients, then I cook whatever inspires me on a given day, using what I have. I do find myself admiring with envy–especially mid-week when life is too busy–the cooks who pull their prepped meal out of the fridge and go for it without needing to give it a thought. I'm focusing today on one of the few things I do prep ahead, and am always so glad I did.
Beef or Lamb Kafta is the centerpiece of a favorite, delectable make-ahead meal. The meat mixture, with all of its herbs and spices (see above!), actually does much better once it chills. My recipe makes the mixture up to one day ahead, but you can extend that to two and it's all good (Kafta Tuesdays!). The highly seasoned (read: incredibly delicious!) meat can then be shaped just before making or a day ahead. That shaping can take one of three forms: on skewers for the grill or under the broiler, in logs or patties for grill, broiler, or in a skillet (my favorite this time of year), or in little savory bites.

Make the meat mix ahead and you've done yourself a big favor come dinner time. These make fantastic burgers!
Make the couscous ahead (find it here). Prep your olives and veggies ahead and store, separated, in the fridge. Make the vinaigrette and keep that in a jar, refrigerated. Then simply assemble for dinner.
This stew can be part of your kafta menu (double entree, we do it often!) or for another night, but in any case it makes ahead SO so well. Tastes even better the longer it rests in the refrigerator (up to 4 days).
