Happy February, too! I know this month ahead is, for some, long and less-than. Not I! I love February, month of hearts and up here in Michigan, lots of snow, and sister-birthdays between my sister and me. I know you'll be relieved to hear we have ovens now, so it's going to be a bake-o-rama this month! Had such a nice convo with the strong young guys who did the heavy lifting. They asked what would be the first thing I'd bake that day (brown butter chocolate chip cookies--don't miss those!) while I stood by wide-eyed with excitement. Poor guys just wanted a cookie, but they couldn't wait around for it.
Plenty of reasons to gather and eat in the coming weeks, especially the Superbowl (of course we'll watch, however bummed we may be that the Detroit Lions aren't there...). Scroll down for my favorite stick-to-your-ribs main dishes that are easy to make for a group and do more to satisfy eaters than chips-n-dips alone can.
Ohhh the flavor! It's all here. Make them like this, kebab-style, or as little killer kafta bites that are also so very delectable. The seasoned meat-mix is also great shaped as patties for burgers or sliders.
"Best Kafta I ever ate! And I married into a Lebanese family from Beirut!" -a 5-star fan
Oven-Fried Chicken.
Get the crisp goodness of fried chicken, but do it on sheet pans in the oven. You can actually make this ahead; the chicken reheats very well in the oven.
This hearty shawarma is made stovetop and turns into a perfect make-your-own set-up. The trimmings really add a lot: onions, tomatoes, pickles, fresh mint. Use pita as the wrap (add romaine leaves as no-carb alternative).
The marinated chicken thighs can go in the oven if your grill is covered with snow like ours is. Make ahead, then slice and saute in a pan with some EVOO right before serving.
"This recipe is PHE-nomenal! This is one of the best chicken dishes among any cuisine, any cooking method. And it's so simple! AND healthy!" - a 5-star fan
7 Spice Chili.
This tastes as good as it looks! That's labneh on top, chickpeas in the mix, and the tomato broth has hallmark Arabic flavor with 7 Spice seasoning. Ladle bowls of this with pita chips tucked in for crunch. Grab great 7 Spice in my shop.
