Just a fun and hearty salad to get you in the holiday mood! A cold weather spin on panzanella with roasted root veg and sweet potatoes, chickpeas, chopped kale, of course the toasted bread cubes (the best part!), and a white balsamic, shallot & thyme dressing.Most of the action happens in the oven and I just shake the dressing up in a jam jar. If you can find pre-chopped kale and those little cups of pomegranate seeds at your local grocery store, this recipe is even easier.Hope you love this festive salad that's of course appropriate for any time of year.
