With the family all together here, we have many different eaters at the table on any given night. Vegetarians, we love you! I'm always looking for dishes that will satisfy and bring great flavor along with the nutrition we all need, and make everyone feel like they enjoyed a wonderful meal....
One of the ways I get there is with lots of fresh herbs, lemon, and the grill. I wish I had more time for a real garden (#goals), but I do have a special corner for the mint, the na'na. Are you growing mint?! It goes crazy, so I keep it in a bucket with the bottom cut off, that is planted into the ground. Look how it stays in place!

The char is so good! As is the lemony, garlicky mint vinaigrette to drizzle over the top, making these veggies special.
This is a protein-packed pilaf, because bulgur is high in both protein and fiber. This one uses zucchini and onion; cook with vegetable broth, water, or chicken broth. Easy+quick to make, super satisfying, and just delicious. Put bulgur in your rotation! Use coarse bulgur (#3) for pilaf.
Just yes! Chickpeas, fresh herbs, onion...we love homemade falafel with a passion! Tahini sauce too, and those pink turnip pickles that wake up everything they touch.
Pink turnip pickles are the BEST! They're easy to make and can go garlicky, spicy. These are refrigerator pickles so you can go small-batch and make a quick jar. Put them out with your olives and watch them go.
