| Hello reader Are you a walnut lover? I know they're not everyone's favourite nut. Luckily, CT likes them as much as I do, which is a lot. This is a good thing as they're a really nutritious nut and said to be beneficial in many ways. When a gluten and dairy intolerent friend came visiting a couple of weeks ago, I knew exactly what cake to make. You have to bake a cake for visitors, right? It's my riff on karydopita, a popular walnut cake in Greece. I don't always make it gluten-free and dairy-free, but it's very adapatable and works well all ways. The cake is doused in a spiced honey syrup after baking, but don't worry, it's not overly sweet. Or at least my version isn't. I hope all is well with you after Storm Ciarán last week. We battened down the hatches expectantly, but it ended up being a bit of a damp squib. Not that I'm complaining. Some people got hit quite badly. In other news, I'm cold. We haven't turned the heating on yet, though I do have a heated cushion on my back when I'm at my desk. I'm thinking I need to hunt out my mittens as my hands are starting to lose feeling. And it's still quite mild out there - argh! How are you getting on?
