Anyhoo today, let's figure out the mystery behind why our favourite fruits and veggies sometimes decide to turn a not-so-appetising shade of brown. Why the Browning? When we slice or peel fresh fruits and vegetables, we unleash the power of an enzyme called polyphenol oxidase. This little culprit reacts with the oxygen in the air, sparking a process known as oxidation—the very reason your apples and avocados can go from vibrant to brown. Preventing the Browning Blues Now, for the good part—keeping your produce looking fresh and appetising. Here are some tried-and-true techniques: For Fruits: - Citrus Juices: Brush the fruit's surface with citrus juices like lemon, lime, orange, or grapefruit to slow down browning.
- Soak in Acidulated Water: Pop your fruit into water with added lemon juice or cider vinegar. This reduces the pH on the surface and limits oxygen exposure.
- Other Options: Try ascorbic acid (Vitamin C), dip slices in lemon-lime soda, or soak apple slices in apple juice.
Remember: Don't over-soak—15 minutes for apples and 3-5 minutes for bananas should do the trick. For Vegetables: - Cold Water: Immediately place peeled potatoes or other veggies like aubergine in cold water until you're ready to cook or chop. This prevents discolouration.
- Acidulated Water: Create a mix of lemon juice and cold water (or vinegar). Soak your veggies to keep them looking fresh.
- Other Options: Ascorbic acid, cooking immediately, or rubbing the cut surface with lemon can also work wonders.
