A faff-free dinner for two on the table in 15 minutes! | | Quick rice noodles with tofu & greens | | These noodles are minimum effort, maximum satisfaction. You can make the sauce as the vegetables are frying and have dinner ready in about 15 minutes. | | SERVES: 2 TIME: 15 minutes INGREDIENTS 200g rice noodles (we used brown rice noodles) 2 tablespoons maple syrup 2 tablespoons brown rice miso paste 2 tablespoons tamari 1 tablespoon olive oil (+ 1 teaspoon) 150g firm tofu, chopped into bite-sized pieces 2 handfuls of broccoli (about 150g), cut into florets 2 handfuls spinach (about 60g) | | METHOD 1. Cook the noodles according to packet instructions. Drain and run under cold water to halt the cooking process. 2. Whisk the maple syrup, miso, tamari and 2 tablespoons water in a small bowl. Set aside. 3. Heat the oil in a frying pan over high heat. Add the tofu and cook for 5–6 minutes, stirring occasionally, until golden brown. Add the broccoli, spinach and the sauce; cook for about 2 minutes, stirring often, until broccoli is vibrant green. 4.
