Hi reader!
This is the time of year when we trade warm, sunny afternoons for snow storms the following day, and you can never look too far into the forecast because it changes on a dime.
Next week's meal plan reflects that. We've got a mix of fresh and light dishes that double as healthy lunches for the following day, plus cozy, one pot meals to look forward to on a chilly or drizzly evening.
As always, feel free to mix and match these recipe to fit your schedule and preferences. In the meantime, have a fun and fabulous weekend!
Your Weekly Menu
Monday: Jennifer Aniston Salad. Start the week off right with this viral recipe! Feel free to add roasted shrimp or sauteed or grilled chicken, or enjoy meatless as written. Pack leftovers for lunches next week.
Tuesday: One Pot Gnocchi Chicken Pot Pie. I like Delallo GF gnocchi (purchase on Amazon or Vitacost if you can't find in stores,) Isola refrigerated gnocchi (I buy at Whole Foods,) or Gia Russa GF gnocchi. Serve with steamed broccoli or a side salad.
Wednesday: Easy Fried Rice. This is a great fridge and freezer clean out meal - use any and all veggies you've got on hand, and/or swap chicken for cubed tofu, leftover pork roast, or diced shrimp. If you've got it, a drizzle of Bachan GF Japanese BBQ Sauce on top is a MUST!!
Thursday: Italian Sausage and Pepper Ring Mini Meatloaves. I like to serve parmesan butter toasts with these meatloaves (spread GF bread or buns with butter then sprinkle with parm and broil until golden brown - drool) plus a veg.
Friday: Cheeseburger Quesadillas. This is a great, casual meal for Friday, and everyone can pick their toppings/fillings. Serve the extra special sauce on top of a wedge salad, or whip up a side of fries. Hey, it's Friday!
