Hello reader It's my last week at college before we break up for Easter. I'm so looking forward to a couple of weeks catch-up at home. It's a chance to get into the garden which I've neglected these past few months and hopefully time to get some good walks in too. Easter is, of course, a time for chocolate. So I make no apology for this week's post which is anything but healthy. It is delicious though. Tiffin, also known as chocolate fridge cake is one of my many weaknesses. I don't make it often as neither CT nor are able to restrain ourselves when it comes to such temptation. This recipe for Easter tiffin includes raisins (because you can't have Easter without dried fruit) and is flavoured with Easter spices. It's also topped with crushed mini eggs. In addition to being an easy no-bake treat for Easter, it's also a good way of using up any Easter chocolate or eggs that you might have hanging about after the event. To be honest that's not something we generally suffer from in our house, but I know some people just want a good clear out. What's your favourite Easter bake? Do you have a tradition? My mother makes a gorgeous simnel cake every year without fail. I make one only occasionally. Mostly because CT isn't a fan of fruit cakes.
