Contains one of my best ever salad dressing recipes!
This salad has it all and is truly delicious on its own. It's fresh, crisp, briny, sweet, spicy, salty, loaded with veggies, and made a little bit hearty with chickpeas. Everything is chopped fine so that you get a taste of it all in every single bite. Ideal!
The dressing is one of my favourites. It had red wine vinegar, fresh thyme, garlic, and a few unexpected flavour bombs. I often double the recipe and keep it on hand for other salads during the week. It leans towards the acidic end, which is how I prefer salad dressing in general.
