 | ~ Here's why it's the best ~ Once you try my fresh, herb-laden falafel, there's no going back! The basis of falafel is chickpeas, and skinless dried fava beans if you can find those, so the nutrients are high. Plant-based protein, fiber. My method is frying, but you can coat them with olive oil and bake, or air fry. Not the same texture, but still so good. Make a tahini sauce with a few simple tricks to make it great, for falafel-dipping. And/or drizzle the sauce on a Falafel Pita Roll Up. OMG. Make a pot of soup, and this one is packed with lentils, bulgur and finished with minty, garlicky olive oil. We've been loving breakfast for dinner lately with these simple Soft-Scrambled Eggs with Asparagus. For your salad idea, try Easy Cabbage Salad, garlicky lemony goodness. Any and all of these recipes are made even better with laban (yogurt) or labneh. Haven't made it from scratch yet?
