Can you believe we are on Day 7 of the Mason Jar Salad Challenge? As I said yesterday, you might be saving all of your salads for during the workweek. Not a problem. Enjoy some leafy eats over the weekend, and don't forget to take time today to make your salads for the week. I hope you love them!
The salad I want to highlight today is the Southwest Chicken Salad. This is a favorite with OYS readers. It's a little higher maintenance than some of my other salads because you need to cook the chicken. However, you can use rotisserie chicken or make crock pot shredded chicken and save some for this salad. Just sprinkle it with some taco seasoning to get spicy flavors.

Cooking tips
I recommend using homemade taco seasoning when preparing the chicken; it's healthier and tastes way better. Unfortunately, I don't have a homemade southwest ranch dressing yet.
I found a yogurt southwest dressing at Wegmans I like, so use your favorite.
Shopping Tips
As with all my chicken recipes, my biggest shopping tip is to purchase high-quality organic chicken; it makes a difference. If you don't have easy access to organic chicken, check out Butcher Box online meat delivery. Since 2018, I have ordered a box of meat from them every other month. I think their meats are delicious, and it's so convenient to have a big box of chicken, beef, and seafood delivered to my door. They have deals all the time so check their website for the latest.

What kind of salad dressing can I use? And how much?
The first layer of the mason jar salad is always the dressing. You can use any dressing you like!
I prefer a vinaigrette dressing, but I sometimes use a creamy ranch or blue cheese dressing. Ultimately it depends on your preference; I'll give recipes for homemade dressing in the recipe section.
Remember that the vinaigrette dressing will come out of the mason jar more quickly. If you use a thicker salad dressing, you will have to give it a fair shake and probably use your fork to scrape it.
I use about 2-3 tablespoons of dressing per salad. Of course, the amount of dressing will depend on the total amount of ingredients and your personal preference. When starting with salads, I recommend that you start with a smaller amount of dressing and add more to your salads if needed.
