| I'm Richa, the face behind My Food Story. Welcome to this series where I send you an email exclusive tip/recipe every Wednesday! Here's today's Tip/Kitchen Hack:
Cottage cheese, or paneer as we desis call it, is such a versatile ingredient. I LOVE paneer from the bottom of my heart and stomach. It adds a layer of richness and can transform any boring meal into amazing. Today I am sharing 5 ways to use paneer or cottage cheese in everyday dishes. I'm going to show you how you can convert paneer into different dishes creating a different texture every single time: Cubed: Always use fresh paneer for this style. Dry paneer will crumble and not hold it's shape. It's also wiser to cut paneer while it's cold, straight out of the fridge as it will hold shape better. You can use this in gravies like Paneer Butter Masala or Shahi Paneer. Crumbled or Scrambled: Smush paneer with your fingers or use a grater to do this. Once crumbled, you can season it with spices and add in aromatics like ginger, garlic or onions and use it in a dish like Paneer Bhurji or as stuffing in a Sabudana Vada. Deep Fried: Paneer works amazingly when deep fried - soft, melty almost like cheese. It can be batter-fried like in my Paneer Pakora recipe or in my Chilli Paneer recipe. You can even marinate it, cover it with noodles and deep fry it to make Crispy Threaded Paneer! Tikkis and Cutlets: Mashed paneer also makes a great addition to tikkis and cutlets like my Aloo Paneer Tikki. It's a fantastic source of vegetarian protein and I love adding it to make a dish more filling and hearty. Baked or Babecued: Paneer can be an excellent ingredient for baking and barbecuing. It's easy to skewer and absorbs the flavours from marination very well. You can use paneer for appetizers like oven-roasted Paneer Tikka! Pro Tip: The best paneer is homemade paneer - and it is super easy to make as well! |
