This week we're all noodles, all the time. More specifically, we are looking at noodle dishes that come together in a snap. So should you want to fill ALL of your weeknights with pasta-based goodness – and honestly, who doesn't? – you can make that happen easy peasy.
The brand new recipe this week is REAL GOOD: a spicy, creamy-ish, twirly pile of gochujang ramen noodles that you are absolutely not going to want to miss.
Thank you ever-so-much to the subtle heat of the gochujang sauce and rich creaminess of the peanut butter, thank you to the twisty twirls of the little ramen noodle bricks, and bless those piles of fresh herbs on top. A total weeknight stunner.
Easy Weeknight Noodles
Creamy Shrimp Pasta with Corn and Tomatoes
The garlicky buttery shrimp with pasta totally makes sense, but the sweet corn, spinach ribbons, and cherry tomatoes are such a nice little surprise. Easy, craveable, fresh, summer-bright.
A deep, savory, delicious bowl of ramen, packed with bright veggies and a super flavorful homemade broth (no tiny seasoning packet needed!). Are you going to put a soft-boiled jammy egg in there? YES PLEASE.
Super-crispy, panko-crusted zucchini covered in endless pulls of mozzarella and fresh torn basil, then you just kind of plop that on top of a bowl of your fave spaghetti and twirl and crunch away!
A real weeknight win! The ingredients are probably already in your cupboard, veggies and protein are totally flexible, and you can even use spaghetti noodles if you want. We won't tell.
What goes better with noodle-y things than perfectly tart, sweet, streusel-y raspberry crumble bars?
