Happy Tuesday my friend!
Well, another day, and another day home sick with the kiddo.
I can't really complain, we had a month stretch with good health, so this little cold should be no biggie...I hope. And I certainly hope I don't catch it.
But it's turned out to be a not so shabby day. D and I are just hangin' at home making crafts, painting our nails, and watching Octonauts until we run out the clock til nap time.
As for the kitchen reno, the work is still going strong, but the kitchen's still unusable at this time.
Fortunately for me I have this tasty Instant Pot Chili ready for me in the freezer for these kinds of emergencies.
All I need to do is thaw it in the microwave or reheat on the saute function of my Instant Pot. Even if I had to make it from scratch, it's a one pot dish that's entirely made in the Instant Pot--start to finish--no kitchen required.
Thank goodness for small countertop appliances, and thank goodness for this hearty spicy chili on this cold Spring day!
