Well, it's another overcast kinda day here in Maine. No rains yet, but I hear they're stopping by this afternoon.
When the skies are a bit gray I always get the urge to bake. So I did.
Currently in my kitchen are the most delicious cookies ever: Butterscotch Chocolate Chip Cookies...with POTATO CHIPS!
This is a triple chip extravaganza people!
Now you don't see potato chips in a cookie that much these days, but let me assure you, they're the best kept secret in the world of salty-sweet combos.
Crispy, crunchy, potato chips are peppered throughout these chunky and chewy cookies to offer you a unique texture and little bursts of salt in each bite.
But every chip has a job in this cookie. The butterscotch chips bring their own individual sweetness and caramelized flavor, while the chocolate chips complement the other guys with a touch of bitterness and little creaminess.
The best part about these cookies is that there is no chilling needed (but they can be chilled for make ahead purposes), no softening butter, and can be whipped up in no time!
