How to eat grass-fed and organic meat while traveling

Hi reader,

Last week I told you everything we packed in our food locker, so this week I thought I'd share what we packed in our cooler.

Our goal here was to pack enough meat to last us TWO WEEKS without a refrigerator. Some of our cabins have mini-fridges, and so far in the trip none of them have had freezers.

We also wanted to pack as much food as we could from home. This keeps our expenses on the road low, but it's also good stewardship of our monthly Butcher Box subscription AND it's the high quality meat my husband needs to continue his healing process.

In case you missed it, here's a rough draft of the 10 meals we're rotating through:

  1. Instant Pot Mississippi Chicken (boneless skinless chicken thigh + sliced pepperocini's + ranch seasoning)
  2. Instant Pot BBQ Beef (beef shoulder roast + 10 oz BBQ sauce)
  3. Instant Pot Carnitas (pork butt roast + taco seasoning)
  4. Instant Pot Chicken Tinga (boneless skinless chicken thigh + taco seasoning + diced tomatoes + cayenne pepper)
  5. IP / Foil Packet Chicken Fajitas (meat + onions + peppers)
  6. IP / Foil Packet Beef Fajitas (meat + onions + peppers)
  7. Grilled Shrimp / Salmon
  8. Grilled Burgers
  9. BBQ Chicken Thighs
  10. Main Meal Salad w/Leftover Protein

Based on this, I packed the following in our cooler:

  • 3lbs chicken breasts x2
  • 3lbs bone-in skin-on chicken thighs x2
  • Whole chicken x2
  • Chuck roast x2
  • Pork loin roast x2
  • Sugar-free bacon x2
  • Tri-tip roasts x2


And if you can believe it, this has lasted us 17 days on the road without a freezer!! (Although we are adding ice. :))

And when we ran out, we simply updated our shipping address and had our monthly box delivered to the next campground! 🙌
