Here's your Meal Plan for the Week! 😘

Hello again!

I this email finds you well, and that you have a fun weekend to look forward to. I'm starting to get butterflies in my stomach thinking about my son going back to school this week. It's the EXACT same feeling that I used to get as a kid before school my own started, and now I feel the same way for my kids.

I think they're both excited and nervous, since we did virtual school all of last year. It's going to be a big adjustment for all of us!

Speaking of, if you need some packed lunch inspiration, don't forget about my huge school lunch ideas post. It has a free printable that you can stick to your fridge to help with the daily lunch process! I keep it stuck on the door to my pantry, to help with ideas. :)





Here's What You Missed

If you haven't visited my website this week, here's what else is new:

Chocolate Coconut Ice Cream. This vegan ice cream has the best chocolate flavor! My goal was to make it so rich in flavor, you wouldn't notice it's made with coconut milk. And I think I succeeded! My mother-in-law (who can't have dairy) tasted it this week and couldn't believe there wasn't any milk inside!

Vegetarian Cobb Salad. This salad is a great make-ahead meal for a packed lunch. It's loaded with protein (and has tips for making it vegan!) and is tossed with an easy red wine vinaigrette.

Magic Shell. Have you ever tried this magical ice cream topping? It hardens into a shell when it touches cold desserts, and all you need is 3 simple ingredients to make it.

Peanut Butter Banana Smoothie. This smoothie tastes like a milkshake! It's naturally sweetened with fruit, and couldn't be easier to make.

Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!


Sunday: Vegetarian Cobb Salad. I can't think of a more delicious way to kick-off the week. Use the leftover dressing for another salad for lunch the next day!

Monday: Pesto Pasta Salad. Use up any fresh basil you have on hand with this delicious recipe! It's so flavorful, you don't even need cheese for this one.

Tuesday: Easy Coconut Curry. A great way to use up any veggies you have on hand! Serve this over brown rice, and make 1 extra cup of cooked rice to have on hand for tomorrow night's meal.

Wednesday: Nut Roast. This is one of my favorite vegetarian main courses, because it's hearty, flavorful, and filling. And the leftovers will make an easy packed lunch!

Thursday: Vegan Stuffed Zucchini Boats. A delicious and filling way to enjoy seasonal zucchini! I love the Southwest flavors in this one.

Friday: Vegan Sushi Bowls. You can use real rice, jicama rice, or cauliflower rice as the base of these bowls. The dressing brings all the flavors together and makes it addictive!

Saturday: Day off from cooking! (Leftovers or take-out)

Breakfast Ideas


Pumpkin Oatmeal. The perfect breakfast as we transition towards Fall. And you'll get a serving of veggies in your breakfast!

Peanut Butter Overnight Oats. My favorite overnight oats recipe.

Coffee Smoothie. Get your caffeine fix with this delicious drink! It tastes like a fancy frappuccino, but it's fruit-sweetened and filling enough to last you to lunch.

Coconut Flour Waffles. Grain-free waffles that are made without almond flour! These are my kids' current favorite when it comes to waffle recipes.

Sweet Potato Hash. An easy sheet pan breakfast that will serve a crowd.

Chocolate Chia Pudding. Who doesn't want a filling breakfast that tastes like a dessert? Try it with fresh raspberries on top for a burst of nutrients and flavor.
