By this time of year, garden produce is more than plentiful. Running out of ideas for all those zucchini, tomatoes, and cucumbers? Below are some of our favorite recipes for showcasing summer vegetables. Whether you grow your own or load up at your local Farmers Market, be sure to give a few of these recipes a try and tell us what you think.
CUCUMBERS
Creamy Spicy Cucumbers- this summer side dish is full of crisp cucumber slices in a spicy, creamy dressing. Quick and easy to make.

Marinated Cucumber, Tomato, and Onion Salad is the perfect summer salad. It's both sweet and tangy and the fresh crispness of the cucumbers and onions can't be beat.
Zucchini
Japanese Zucchini is sauteed with onion in soy sauce and teriyaki sauce plus a few red pepper flakes for spice. Makes a great side dish for any Asian meal or grilled seafood, chicken, or steak. This recipe has been so popular since we published it.
Jalapeno Popper Zucchini Boats are a low carb side dish or appetizer with all the flavor of jalapeno poppers. So cheesy with a spicy kick!
Cheesy Squash, Zucchini, and Corn Casserole is a creamy, cheesy casserole full of summer vegetables. Lots of cheddar cheese and buttery cracker crumbs make this one heck of a side dish.
Tomatoes

Okra
Stewed Okra and Tomatoes is a healthy and delicious southern side. Fresh summer okra, sliced and cooked with canned tomatoes (you could use fresh instead), bacon, onion, celery, and a few seasonings makes a delicious vegetable side dish for almost any meal.
No summer is complete without a few batches of homemade southern fried okra, dredged in flour and fried until golden. These fried nuggets with hints of green peeping through are so delicious, there's no need to add anything to them except a light dusting of salt.
