It's August! For me, August is my LAST month of summertime recipes before I start transitioning to fall content. Let me just say, these sweet potatoes are the BEST side dish!
A new month means a new email-only recipe just for YOU! That's right -- these Chili Lime Sweet Potatoes won't be hitting the blog. Instead, I'm providing it below as a thank you for subscribing and being here.
No joke, sweet potatoes are in my top five favorites foods. They're delicious paired with eggs for breakfast, on top of a salad for lunch or as a side dish for dinner. These chili lime sweet potatoes really elevate the flavor profile, and are a nice way to switch up how you normally cook them.

CHILI LIME SWEET POTATOES
Serves: 2-4
Ingredients:
1 large sweet potato, sliced into rounds
2 tbsp olive oil
2 tbsp lime juice
1 1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
Directions:
1. Preheat the oven to 425° and line a large baking sheet with parchment paper. Slice the sweet potato into 1/4" rounds. No need to peel it! Transfer the potato rounds to a large bowl.
2. Next, drizzle the olive oil and lime juice overtop of the potatoes, and use a spoon or your hands to coat the potatoes. Stir the chili powder, garlic powder and salt together in a small bowl, then pour the seasoning over the potatoes and again, stir so that the potatoes are coated.
3. Place the potatoes in a single layer on the baking sheet, trying not to overlap them. Bake the potatoes for 25-30 minutes, flipping them half way through. Enjoy!
