Good Morning Beautiful! Top o the Friday to you! (Is that something people say? I doubt it. lol). Oh well, I just said it to YOU! Feel free to use it as you go about your day today! Let your weirdo flag fly, I always say. hahaha. Anyway, hoping all is well with you and that your A/C is working perfectly if you live somewhere where the heat is oppressive (like I do). I opened the back door yesterday to run an errand and when the blast of heat hit my face I thought, "I could be walking into a forest fire and wouldn't even know it from the heat out here". Ugh, miserable. No worries, I'll be complaining about the cold soon enough. But, enough about the weather, lets GET ON WITH THE FOOD!!! __________________ Do you have any new favorite dishes? Have you discovered something that you love to eat in the months of solitude we've all experienced? Me? I think I have been enjoying Curry Powder, Chai flavors, Fresh Ginger and Cardamom more . Mmmmmmm. Yum. I'm sure I don't use them in the ways that they originated but I'm also sure that is what food is about. Make it your own. Why are these my new favorites? For one, I've developed a sensitivity to dairy and while that breaks my heart, it HAS caused me to step out and learn to enjoy some new flavors. No worries though, you'll still see eye popping cheese pulls and creamy cheesy recipes all over the Loaves and Dishes website because my sensitivity hasn't stopped me from enjoying a bite or two. That said, one of my favorite newer recipes is this Honey Mustard Curry Chicken! So simple, just marinate the chicken and then cook it (we like it grilled - those blackened crispy bits are the BOMB!). Although it sounds bizarre, it goes perfectly with this Green Chili Rice (includes that cheese)! Oh man, I can't get enough of either of these! And what about chicken wings? I love em! Do you know how to cut them? If not, I show you how here. Then, I've got several really great recipes for them.. I mean, seriously, you better hang on to your hat because your mind is BANG when you read this. Don't you hate a wilty salad? Me too! Do you do everything you possibly can to keep a salad crispy? Do you mix up your salad last minute just hoping it stays crisp through the meal? You could NEVER add salad dressing before serving it and still have a crisp salad even a few minutes later, right? Now, just to be clear, I'm not saying suggesting that a salad can stay crisp for hours using this method, but I am saying, that it will at least remain crispy through dinner and maybe longer. Lettuce leaves have a waxy coating that is easily penetrated by oil. If you toss a salad with an emulsified oil, the salad leaves will be able to protect themselves through their waxy coating against the dressing and will remain crispy for at least 20 minutes or so. If you add oil and vinegar separately, add the vinegar first to give the salad a coating before the oil (wont' keep as crisp, but is better than oil first). _________________________ THREE LITTLE THINGS I'm trying to be more thankful for small things in my day to day life to help me be more grateful in general. Reviewing a few of those things here will maybe help you to remember those small things too? I hope so.
___________________________ A FINAL WORD Have you had a hard week? I have. It's been a couple of extremely hard weeks. Sometimes those weeks seem very lonely and it feels like struggling up a mountain by myself. I bet you feel the same sometimes. You aren't supposed to mountain climb or hike alone, did you know that? I think it's important to remember that we shouldn't be struggling through life alone either. It can be hard to be vulnerable enough to reach out for a hand to hold.
