These cookies are nut-free and are made with chickpea flour, so they pack extra plant-based protein in each bite. I love their chewy texture, and my kids have declared them their new favorite! (Note: Do NOT taste the raw cookie dough... it's very bitter until it's cooked. But, this might be a perk if you don't want to be tempted by raw dough?!) Here's What You Missed If you haven't visited my website this week, here's what's new! Coffee Smoothie. This is my go-to drink when I'm craving a fancy blended coffee, but this one is entirely fruit-sweetened, dairy-free, and made with home-brewed coffee. It truly tastes like it's a frappuccino! Instant Pot Black Beans. Now that I've been cooking dry beans in the pressure cooker for years, this post got a major update, including tips for making super-flavorful black beans that you can use in burritos, bowls, and as a side dish. And there's a new video walking you through the process step-by-step. Chickpea Flour Cookies. If you love chewy cookies, these are for you. I've been on a chickpea flour kick ever since I learned how to make it at home, and it acts so much like wheat flour-- even though it's gluten-free. I hope you'll love them as much as I do! Here are some delicious ideas to help! *Get the Shopping List: You can also view this week's meal plan here, and create a shopping list for it with the press of a button. Any customization you make will save to the browser you're using, so be sure to use your phone if you want to take it with you to the grocery store, or use the convenient "print" button to save your work. Sunday: Roasted Vegetable Pasta Salad. This is a great way to use up any veggies you have on hand, and the flavors are so comforting! Use the leftovers as an easy packed lunch the next day. Monday: Curry Chicken Soup. This is my family's favorite soup, so I try to make it at least once a month! If you're vegetarian, add in some shredded jackfruit (rinsed very well!) or chickpeas instead of the chicken. It's also delicious with some cooked rice or quinoa stirred in, to make it extra-filling. Tuesday: Vegan Nachos. This is my kind of comfort food. You can make the components ahead of time, but each one takes less than 10 minutes in a blender! Don't skip the bean dip or nacho cheese sauce. I love it with extra sliced jalapenos on top, too! Wednesday: Cauliflower Fried Rice. The easiest way to eat a whole plate of veggies. It's super-fast when you can find pre-riced cauliflower at the store, and you can customize it with any protein you like. Thursday: Green Bean Salad. Serve with your favorite protein on top! I usually go with air fryer chicken breasts or baked tofu. Friday: Whole Roasted Cauliflower with Mashed Potatoes and Gravy. This meal is entirely plant-based and reminds me of Thanksgiving dinner! Only, it's much easier when you use the Instant Pot to cook the mashed potatoes. Saturday: Day off from cooking!
