Tuscan Chicken Is the "Most Delicious" Dinner of All Time, Says Everyone

Lazy Dinners for a Busy Week I've been in New York seeing The Kitchn team, so I'll be leaning into lazy dinners this week as I get back into the groove. That means pulling out the slow cooker on Sunday for our Chicken Pozole, a Mexican soup that you set and forget and then finish with fun toppings like cotija, cilantro, and lime juice. On Monday, I'm going for something FAST with our brand-new 20-minute Korean Beef Bowls (a massive hit on the site this week!). Inspired by classic bulgogi, this quicker version uses ground beef. Taking off on the site right now is Janette's Garlic Lemon Spaghetti. With a creamy sauce packed with so much bright lemon flavor (juice and zest!), roasted garlic (I promise, you CAN roast garlic on a Tuesday!), and Parmesan, it sounds like a dream. I'll be putting in a titch more effort with this tofu recipe. We hardly ever eat tofu in my house, but Christine's Chili Crisp Tofu is apparently off-the-charts for its crispy texture (from pan-frying — no deep-fry required!) and savory-spicy flavor. It's just the level of ease I'm looking for right now (and honestly every night). I aim for recipes that rely on familiar ingredients I already have in my pantry and drawers, and don't require too much hands-on cooking time. (Fortunately, you'll find a lot of these on The Kitchn!) Novelty is important. Cooking dinner night after night can be relentless — I gotta feel excited by what's on my plate, whether it's a new flavor, ingredient combination, or simple technique to save some time.  I eat pretty much everything. I change up my proteins throughout the week with chicken, seafood, beef, and pork making frequent appearances. And there's always room for pasta! That said, I'm not in my spicy era. I have two little boys — 3 and a half years old and 10 months — so my picks will mostly be recipes that shy away from too much heat.
