Over the last decade, meal prep has been one of the most important habits I've built. It helps me eat healthier, stay consistent, reduce stress, and save money week after week.
But let's be honest: not every week is perfectly planned. Some (most) Sundays, I don't have the time or energy to prep five different meals.
And that's okay, because I've learned that prepping one thing can still make a huge difference.
It's simple. It's versatile. And it sets me up for success in so many ways.
I actually consider it one of my favorite pre-ahead meal starters, which is just a basic prepped ingredient that can be used in a bunch of different meals. Meal starters are great when you want prep to be easy, flexible, and low-pressure. Instead of prepping full meals, you prep one or two building blocks you can mix and match all week.
Quickly throw together a soup – Try this Tortellini & Spinach Chicken Soup or Chicken Enchilada Soup. Honestly, you can add shredded chicken to just about any broth with veggies for a filling, high-protein lunch or dinner.
Build a grain bowl – Mix shredded chicken with cooked rice or quinoa, a simple sauce, and a veggie of your choice. My kids love this combo!
Sometimes we think healthy eating requires an all-or-nothing effort - prepping five meals, tracking macros, planning snacks…
But it doesn't. Starting with one small prep - likee shredded chicken, can make the rest of your week easier.
It's a small investment of time that pays off every day after. And it's one of the simplest ways to take control of your week, without overhauling everything at once.
