| What's an email-only recipe, you ask? It's an exclusive recipe that I'm only sharing with those who are on my email list, aka YOU! This recipe won't be on the blog, and instead will live here in this email. I'll be sending out email-only recipes at the beginning of every month. I wanted to share this Healthy Peanut Butter Rice Crispy Treats recipe with you. I love rice crispy treats, but marshmallows aren't an ingredient I typically keep in my pantry. These rice crispy treats are made without marshmallows, and they are the perfect sweet treat! Full recipe below -- enjoy! Peanut Butter Rice Crispy Treats Prep time: 10 minutes Freeze time: 30 minutes Serves: 9 large bars or 16 smaller bars Ingredients: 1 cup peanut butter (preferably all natural peanut butter/peanut butter with minimal ingredients in it so the texture is a bit runnier)
NOTE: I originally tested these without the honey, and they don't hold together as well. If you don't want to use honey, brown rice syrup is a good alternative. I hope you love this recipe as much as I did! If you're not already, be sure to follow along on Instagram, and of course let me know if you try this recipe! -Erin |
