Chicken Marbella—arguably the most famous recipe from the beloved Silver Palate Cookbook (first published in 1982!)—has been a staple at my family's holiday table for as long as I can remember. With Passover just around the corner, it's the kind of dish that feels both nostalgic and special, yet is easy enough to pull off without much fuss. The magic is in the flavor combination: chicken marinated with garlic and herbs, then roasted with prunes, olives, capers, and a savory-sweet wine sauce. It's a little unexpected but completely delicious—and the best part is that all the prep is done ahead, so at dinnertime you just pop it in the oven.

Pavlova is one of those desserts that looks impressive but is actually quite simple. It has a crisp meringue shell with a soft, marshmallowy center, topped with whipped cream and fresh fruit.
