| Dear fellow Aussies - This is my love letter to Charcoal Chicken Shops. No, we're not making charcoal roast chicken today. We're making those chicken skewers you see stacked in the warming window, so heavily seasoned it's almost like they have a crust. I know it's not the main event at chicken shops (I don't even think they're cooked over the coals!), but I've always loved them and I decided it was time to crack the code to that seasoning.
