It's March (!!) and I don't want to say "we made it," but, like, we kinda made it?!
To celebrate the arrival of warmer days hopefully very soon, this is a list of my favorite light and bright dinners that I have on the menu for this month! Lots of fresh herbs, crunchy veggies, lemony sauces and dressings, and COLOR.
All of us are still very much obsessed with this one (love seeing all of yours on Instagram!). Sweet-and-smoky chipotle salmon, fresh orange salsa, creamy aji verde... light, bright, and perfect!
My recent favorite Trader Joe's hack! Pre-made chicken shawarma as the main star, some easy lemon rice, feta cucumber sauce, and a heap of brightly colored slaw. SO good.
If you've been around for a while, you know this is a springtime classic! All the deliciousness of a herby noodle-y crunchy spring roll, but in a bowl!
The shower of herbs on top of this one just really gets me. ☀️ PLUS the crispy golden tofu bathed in a peanut gochujang sauce that is spicy, sweet, tangy, and so, so delicious.
Another shortcut dinner hack! Caramelized peanut chicken, a tangle of vermicelli noodles, fresh herbs and cucumber salad, and peanut sauce all over top.
Inspired by one of my favorite restaurants in MN! Just a really good, really fresh, really hearty and filling salad. Perfect with salmon or chicken on top!
Lemongrass, ginger, shallot, and the brightness of lime! Love this flavor combo. These broth bowls have got it all – luscious broth, fluffy rice, protein, and fresh herbs.
Juicy pineapple and crispy spiced chicken, tucked into tortillas, and rolled up with creamy jalapeño ranch slaw. One of my family's absolute favorites.
There's something about a big bowl of perfectly shredded veg that just makes any lunch or dinner happier. And this dressing is one of the best - sweet, salty, tangy, and creamy!
