*I know today is Valentine's Day, but I still wanted to get a weekly menu plan in front of you in case you'll be planning next week's meals sometime this weekend! π*
Below is a weekly menu plan with:
six dinner recipes
two side dish recipes

Make one recipe, or make them all! You can easily swap the recipes in and out for the days of the week that work for you.
This is a great, hearty, meatless meal. It can be assembled ahead of time (if doing so, make sure the pasta and cheese sauce have both cooled a bit before mixing together). I've also frozen this (unbaked) with good results to thaw and bake when needed. I haven't tried baking it from frozen.
This recipe and the chicken salad sandwich recipe make good use of rotisserie chicken meat - buy one chicken and split between these two meals (may need more than one chicken if feeding more than 4 to 5 people). I always make extra of these quesadillas for quick lunches.
You can easily omit the meat in this soup for a meatless soup (if doing so, consider adding another can of beans). The soup can be made several days ahead of time to reheat when needed and the recipe also does great kept warm in a slow cooker for several hours.
This simple dish is one of my favorites to meal prep for easy lunches through the week (or make extra for dinner for intentional leftovers). The sweet potatoes can be subbed out for butternut squash.
The chicken salad mixture can be served on your favorite bread of choice, in lettuce leaves/cups or on its own. I find this chicken salad is best served within an hour or so (rather than making it far in advance).
